Strawberry Pie

    People look forward to seasons for different reasons.  I look forward to summer for berry pies.  Nothing, but nothing is better than this strawberry pie.  This pie takes a little work, but you will marvel at your own skill when you taste the result.  The thought of strawberry pie in the months ahead is what get me through mud season in Maine.

Ingredients

10"  Pie Crust (baked)
3 Pints Strawberries
1 Cup  Sugar
2 Tbs.  Flour
4  oz.  Cream Cheese (room temperature)
1 Cup  Whipping Cream

    Pre-bake a pie crust and set it aside to cool.  Clean the strawberries.  Take two pints of the strawberries and mash them thoroughly.  Mix these with the sugar and flour; set aside until they begin to gather their own juices.  Then put this mixture into a saucepan and bring to a boil, to cook the flour.  Set it aside again to cool to lukewarm.
    Spread the softened cream cheese on top of the cooled pie crust.  Take the remaining pint of strawberries and spread them (whole) neatly around the pie shell.  After the cooked strawberry mixture is lukewarm, pour it over the top.  Refrigerate the pie.  Top with whipped cream (or ice cream) and serve.
